Banana and Walnut Tea Loaf

The final instalment of my #MorrisonsMum recipe collection just had to be a nice bakey post so here we have the ever yummy Banana and Walnut tea loaf. You can take out the walnuts if you like or you can swap them for something else. Also remember that you're going to need some nice ripe bananas. Although it looks like it's an expensive bake, you'll find that you will already have a lot of the ingredients already.

Banana and Walnut Tea Loaf                          Makes, a loaf                               Total bake cost £2.49

  • 100g butter
  • 140g brown sugar
  • 2 eggs - beaten
  • 100g walnuts - chopped
  • 2 ripe bananas, mashed
  • 2 tbsps milk
  • 225g self raising flour
Cream the butter and sugar then add the eggs. Fold in the bananas and milk, then fold in the flour and walnuts. Bake for 1hr at 180C. You can scatter a few more walnuts on top of the loaf about 20mins before you take it out of the oven if you're feeling all Nigellaesque.
